- 158g (1 cup) Rice (leftover) 100.0%
- 79g (1/2 cup) Flour, Rice (homemade) 50.0%
- 44.3g (3 tablespoons) Water 28.0%
- 2.4g (2 teaspoons) Oil, Grapeseed 1.5%
- 2g (1/2 teaspoon) Salt, Kosher 1.3%
Directions
- In WFP16SCD food processor equipped with S-Blade, pulverize (until smooth) cooked rice and water.
- Add rice paste to Luna Planetary Stand mixer fitted with paddle attachment, then add rice flour, salt, and oil and continue to mix until dough ball forms.
- On floured (rice) surface, knead dough.
- Roll out dough to 2 to 3mm thick rounds.
- In 550°F (288°C) WPO500 pizza oven or WGR240X flat-top grill cook dough on both sides (directly on stone) until cooked, crispy, and slightly charred.
