Tomato Leather/Powder

Looking for a way to diversify what your tomatoes have to offer? Make them into a powder for seasoning and intensifying flavor or pull them out of the dehydrator earlier for a flavorful leather that can act as a wrapper or garnish!
Ingredients
- 1.82 Kg (10) Tomatoes (trimmings/overripe) 100%
- 3.75 g (1 1/4 teaspoons) of Xanthan Gum .21%
- Kosher Salt, optional
Directions
- Purée tomatoes in MX1200XTX X-Prep Blender (or vessel with WSB38X BOLT Immersion Blender) with xanthan gum until smooth. Add salt if needed.
- Spread mixture evenly (1 mm–2 mm thick) on silicone-lined dehydrator trays. In WDH10 Dehydrator, dry at 120°F (49°C) for 9 hours to produce leather or for 18–24 hours for powder.
- If making powder, take fully dried tomato sheet and blast in WSG60 Spice Grinder until fine. Sift and re-grind if necessary.
