Kaffir Coconut Rice Pudding

Ingredients

  • 488g (2 cups) Milk, Nut 100.0%
  • 240g (2 cups) Rice, Jasmine (leftover cooked) 49.2%
  • 240g (1 cups) Milk, Coconut 49.2%
  • 96g (1/2 cup) Sugar, Granulated 19.7%
  • 80g (1/2 cup) Raisins (dried old grapes) 16.4%
  • 10g (2 teaspoons) Vanilla Extract 2.0%
  • 1.2g (1/4 teaspoon) Salt, Kosher 0.2%
  • 1g (2 each) Kaffir Lime Leaf 0.2%

Directions

  1. In a sauce pot on WIH400 Induction Range, combine ingredients.
  2. Set WIH400 cooktop to 185F (85C) and cook for 20-30 minutes (until mixture thickens) stirring constantly.            
  3. Remove lime leaves, transfer to serving dish and chill until service.
