Spotty Avocado Fritters

Have your expensive avocados turned the corner? No need to throw them out. Use the spotted ones to make easy and nutritious avocado fritters that will make your guests smile.

Ingredients

For quinoa
  • 370 g (1 1/2 cups) of Vegetable Stock (from ends) 100%
  • 105 g (3/4 cup) of Quinoa, dried 28.38%
  • 22.50 g (1 1/2 tablespoons) of Garlic, minced 6.08%
  • 4.60 g (1 teaspoon) of Kosher Salt 1.24%
  • .60 g (3) Bay Leaves, fresh .16%
For fritters
  • 700 g (4) Avocados (overripe) 100%
  • 420 g (2 1/2 cups) of Cornmeal 60%
  • 134 g (2 cups) of Kale, whole leaf, chopped 19.14%
  • 120 g (1 cup) of All-Purpose Flour 17.14%
  • 80 g (2) Egg Whites 11.43%
  • 42 g (2) Limes, juice and zest (bar waste) 6%
  • 15 g (1 1/2 tablespoons) of Garlic, minced (trimmings) 2.14%
  • 12 g (2 tablespoons) of Shallot, minced (trimmings) 1.71%
  • 12 g (1 tablespoon) of Baking Powder 1.71%
  • 10.80 g (1 tablespoon) of Onion Powder 1.54%
  • 7.50 g (1 1/2 teaspoons) of Gochujang 1.07%
  • 4.80 g (1 teaspoon) of Kosher Salt .69%
  • 2.40 g (1/2 teaspoon) of Garlic Powder .34%
  • 2.40 g (1 teaspoon) of Smoked Paprika .34%
  • 2 g (1 teaspoon) of Ground Coriander .29%
  • 1.50 g (1/2 teaspoon) of Ground Cumin .21%

Directions

  1. In saucepot, bring vegetable stock to boil with bay leaves, garlic, and salt. Add quinoa and allow ingredients to return to a boil. Drop burner to lowest heat setting and allow quinoa to "pop." This will take about 15 minutes. Remove bay leaves and garlic, adjust seasoning and chill until needed.
  2. In cast iron pan on WIH400 Induction Range, sweat minced garlic and shallot. Add kale and continue to cook until soft. Allow time to cool.
  3. In WFP16SCD Food Processor with batch bowl, finely process kale mixture.
  4. To batch bowl, add avocado, lime juice and zest, spices, egg whites, baking powder, flour, and gochujang, and let run until well incorporated. Rest 30 minutes and keep cold.
  5. Fold in 1 1/2 cups cooled quinoa. Taste and adjust seasoning. Scoop out one fritter and roll in cornmeal, then fry to test. Add more flour to bind if needed.
  6. Scoop and roll fritters in cornmeal, then fry in WDF1000 Deep Fryer and season.
