Ingredients
- 336g (1 ½ Cups) Butter 100%
- 270g (4 ½ Cups) Spotted Herbs, chopped 80.36%
- 6g (1 ¼ tsp) Salt, Kosher 1.79%
Directions
- Wash and pick through herbs for slimy or rotten pieces and place them in compost bin.
- On WIH400 Induction Range, boil 1 1/2 gallons salted water.
- Place chopped wilted herbs into water for 20 seconds. Remove and immediately plunge into 2 gallons of ice water or place on sheet tray in blast chiller.
- Remove herbs and squeeze out excess water. Place in MX1200XTX Variable Speed Blender with melted butter and salt.
- Blend on Speed 8 for approximately 2 minutes until herbs are finely blended into fat.
- Strain through fine-mesh staining bag or coffee filter in refrigerator. Strain Butter at room temperature.
