Spotted Herb Butter

Ingredients

  • 336g (1 ½ Cups) Butter 100%
  • 270g (4 ½ Cups) Spotted Herbs, chopped 80.36%
  • 6g (1 ¼ tsp) Salt, Kosher 1.79%

Directions

  1. Wash and pick through herbs for slimy or rotten pieces and place them in compost bin.
  2. On WIH400 Induction Range, boil 1 1/2 gallons salted water. 
  3. Place chopped wilted herbs into water for 20 seconds. Remove and immediately plunge into 2 gallons of ice water or place on sheet tray in blast chiller.
  4. Remove herbs and squeeze out excess water. Place in MX1200XTX Variable Speed Blender with melted butter and salt.
  5. Blend on Speed 8 for approximately 2 minutes until herbs are finely blended into fat.
  6. Strain through fine-mesh staining bag or coffee filter in refrigerator. Strain Butter at room temperature.
