Carrot Top Crackers

Don't throw away dough…make it! Turn the carrot tops you're ignoring into profits with an easy dough like this one used to make crackers.
Ingredients
- 119 g (1/2 cup) of Carrot Tops, blanched 100%
- 56 g 1/2 cup of Water 47.06%
- 56 g (4 tablespoons) of Unsalted Butter 47.06%
- 36 g (1/4 cup) of Extra Virgin Olive Oil, more for brushing 30.25%
- 30 g (3 cups) of All-Purpose Flour 25.21%
- 4 g (1 teaspoon) of Granulated Sugar 3.36%
Directions
- In WFP16S Food Processor with batch bowl, finely chop carrot tops (make sure they're not too wet).
- Add remaining ingredients and process until dough ball forms (can be done in stand mixer as well).
- Roll dough into thin sheets and cut. Brush lightly with oil and poke with a fork.
- Arrange on silicone baking sheet and cook in a WCO500X Convection Oven at 400°F for 18 minutes. Turn tray halfway through cooking.
