Ingredients
- 1000 g (2 ½ pounds) Bananas, peeled 100.00%
- 136 g (½ cup) Soy Sauce (low sodium) 13.60%
- 84 g (¼ cup) Soy Sweet 8.40%
- 42 g (2 tablespoons) Honey 4.20%
- 30 g (2 tablespoons) Maple Syrup 3.00%
- 28 g (2 tablespoons) Water 2.80%
- 14 g (1 tablespoon) Liquid Smoke 1.40%
- 13.50 g (1 ¼ tablespoons) Onion Powder 1.35%
- 8 g (1 tablespoon) Smoked Paprika .80%
- 7.20 g (½ tablespoon) Garlic Powder .72%
Directions
- Preheat WCO500X Convection Oven to 360°F (182°C). In a mixing bowl combine all ingredients (except for peels) thouroughly with WSB38X BOLT Stick Blender. *Omit food coloring if color isn't important*
- Cut banana peels into 1-inch strips and soak in warm water for 1 hour (or in cold water overnight). Remove from water and transfer to shallow container with marinade.
- Force marinade uncovered on MARINADE setting in WCV300 Chamber Vacum Sealer 4 times. Transfer to bag and vacuum seal. Marinade overnight in refidgerator.
- Remove peels from bag and pat dry. Carefully line peels on greased or silicon lined sheet pan and drizzle with oil.
- Place tray in preheated WCO500X Convection Oven and bake for 15-20 minutes until.
- Remove from oven and place peels on dehydrator racks. Place in WDH10 Commercial Dehydrator for 6 hours on 160°F (71°C).
